Danish Wedding Cookies

1 cup (2 sticks) butter, softened
3/4 cup powdered sugar
1 teaspoon vanilla
1/4 teaspoon cinnamon
2 cups flour
1 cup pecans, finely chopped
1/2 cup coconut, finely chopped
1/2 cup rolled oats, finely chopped
1/2 cup miniature semi-sweet chocolate chips, finely chopped

Powdered sugar for coating


Finely chop pecans, coconut, rolled oats and chocolate chips using a food processor or spice/coffee grinder.

Cream butter and sugar together.

Add cinnamon and vanilla. Mix in well.

Add in flour and mix thoroughly.

Add nut mixture working in well.

Roll into balls and flatten slightly.

Bake on ungreased cookie sheet at 350° for 8-10 minutes.

Roll in powdered sugar while still warm.

For crunchier cookies, bake a little longer.

Cool until easy to touch before rolling in powdered sugar.

Roll in powdered sugar again after cooling entirely for a heavier coating.
