Stained Glass Cookies

3 cups flour
½ teaspoon baking powder
¼ teaspoon salt
1 cup unsalted butter
3/4 cup sugar
1 egg
2 teaspoons vanilla
Vegetable cooking spray
Assorted Lifesaver candies

Cream butter and sugar. Add egg and vanilla. Beat in dry ingredients. Divide dough in thirds and refrigerate at least 3 hours or up to one week.

Line baking sheets with heavy foil. Spray with cooking spray. Unwrap candies and split by colors. Seal in zip-lock bags and crush with a rolling pin.

Roll out dough to 3/16 of an inch. Cut out cookies then cut out centers with smaller cutters. Place on cookie sheets about 1″ apart. Fill centers with single color candies.

Bake at 350° for 8 min.

These make great decorations but they aren’t very good for eating. A neat idea that doesn’t really work out in practice very well.
